I often substitute unsweetened almond milk, and the variation is great. The mix stores well in a jar in the fridge for a day or two. It takes a little practice making fillings that pair well with the brandy, but some ideal ones are lemon juice with sugar, peach compote, and whole milk yogurt with berries and a twist of orange over the top.
Great go-to recipe for brunch or breakfast. The butter and brandy can be pared down somewhat and the whole milk can be substituted with almond milk quite successfully keep the butter at the same amount as in recipe though. Easy, delicious. I used my non stick pan, and they came out really well.

I do not have a blender, but used a french wire whisk one step at a time and the batter turned out perfect. My family has been looking for a great crepe recipe and then found this recipe. It made great light crepes that weren't overly eggy as others have been. Now we just need to work on the filling a little. The crepes were awesome, they were very light and if you use apples,jam,or sugar in the middle they are very good. I didn't use the brandy, used 1c low fat milk,.
They were terrific. Kept them between waxed paper, then in warm oven for 30 minutes. Served with seedless raspberry jam, real whipped cream and toasted pecans. I am going to try freezing the left overs.
I will make this recipe again. I only used 2 Tbsp. I liked it but my family especially the kids detested it -- I'm sure because of the booze. I might try again with major modifications -- no booze or only 1 Tbsp of booze, less butter, and less sugar. Fantastic recipe! I make crepes often and these are better than any I have ever made! I absolutely LOVE this recipe! It is, by far, the best crepe recipe I've tried to this day. The crepes come our perfect every time, and they are SO flavorful!
